The Top Chef Canada Winner Redefining Caribbean Cuisine in Toronto
Toronto is one of the most diverse cities in the world, shaped by its culture, food, people, and experiences. In a city defined by that diversity and an ever-evolving food scene, Chef Tre Sanderson is building a culinary identity that feels both deeply rooted and forward-thinking.
A Top Chef Canada winner, the Toronto-based chef is known for a style that blends bold Caribbean flavors with refined technique and modern presentation. Not afraid to push boundaries, his approach is grounded in something more personal, creating food that feels as good as it tastes, and experiences that stay with people long after the moment.
Today, Chef Tre is bringing his cooking into different spaces across the city through pop-ups and collaborations, building a recognizable style and growing his presence in Toronto’s food scene.
Where It All Began
For Chef Tre, his love for cooking didn’t start in a restaurant; it started at home, where it felt natural, almost like second nature.
Growing up around Caribbean food, everything revolved around the kitchen, flavor, family, music, all of it.
Over time, that connection evolved into curiosity, and curiosity into a clear path. What began as instinct slowly became intention, guiding him toward a career in the kitchen.
The first time he saw people truly connect with something he cooked, his perspective shifted. It was no longer just about taste, but about creating a unique experience people could step into, enjoy, and remember.
It was through those early moments that his understanding of food began to deepen, shaping the way he approaches cooking today.
A Foundation Built on Culture and Traditions without Limitations
At the heart of Chef Tre’s culinary journey is his Caribbean roots, a stable base that continues to shape his approach in the kitchen.
My biggest inspiration has always been my roots, Jamaican culture, the way food is bold, unapologetic, and full of life. Beyond that, I’m inspired by the people around me, other chefs pushing boundaries, and the energy of the city.
This influence shows up in everything, from seasoning and techniques to how dishes are built and presented. However, Chef Tre isn’t interested in simply recreating tradition – he is focused on evolving it.
I respect where dishes come from, but I’m not afraid to push them forward. Balance is everything: heat, acid, sweetness, texture. And most importantly, the food has to feel good, not just look good.
Chef Tre’s Style and the City’s Influence
Being based in Toronto has played a major role in shaping Chef’s Tre’s perspective on food. In a cultural hotpot like Toronto, Chef is constantly inspired and exposed to new flavors and techniques.
I like taking familiar flavors and presenting them in a way that is different and new but still authentic. It’s a mix of everything: my background, what I grew up eating, and what I’m exposed to in Toronto. Travel, music, street food, fine dining, it all plays a role.
The Dish That Defines Him and Favorites in the City
If there’s one dish that captures Chef Tre’s identity, it’s jerk.
“Jerk, in any form, whether it’s chicken, pork, or something unexpected, represents balance, technique, and culture,” he says.

Winning Top Chef Canada
Winning Top Chef Canada marked a defining chapter in the Chef’s Tre Journey. Competing against some of the country’s top chefs, the experience demanded precision, creativity, and the ability to perform under constant pressure.
It was intense, humbling, and rewarding at the same time. It really forces you to trust yourself.
The experience pushed Chef’s Tre beyond his comfort zone, sharpening instincts and reinforcing confidence in his creativity.
It gave me a platform, but more importantly, it made me believe in what I’m doing.
Looking Ahead
Looking ahead, Chef Tre has his sights set on opening a restaurant, but only when the time and vision feel right with intentionality and proper cultural representation. Right now, the focus is on building and expanding that vision through experiences within the city.
Right now, I’m focused on building experiences, pop-ups, collaborations, and on bringing my food to different spaces.
