Chef Michael Angeloni, alongside partners Adam Teolis and Yannick Bigourdan, the team behind some of Toronto’s most celebrated restaurants, is set to open Pasta Privato, a refined modern Italian dining spot at 11 Church Street on March 27th.

Tucked within one of the city’s historic neighbourhoods, Pasta Privato bridges the gap between technical precision and the soulful, rustic traditions of Italian cuisine. The result is a concept that feels both elevated and approachable.

“At its heart, Pasta Privato is deeply personal,” says Chef Michael Angeloni. “It’s modern Italian seen through my own lens; marrying traditional roots with the local diversity of Toronto’s culinary scene. We’ve stripped away the stuffiness of traditional fine dining to focus on what matters: the integrity of the ingredients and a genuine connection to the craft.”
On the Menu
The menu is designed as an evolving exploration of artisanal pasta and seasonal Italian cooking.
Guests can expect a thoughtful selection of cicchetti, antipasti, handcrafted pastas, and composed secondi, all rooted in tradition while reflecting the city’s diverse culinary influences. The menu will change regularly, highlighting peak seasonal ingredients and collaborations with local artisanal producers.

Diners can choose from à la carte offerings or opt for an eight-course tasting menu priced at $125 per person.
For its debut, Chef Angeloni introduces “Un Omaggio” (An Homage), a menu series dedicated to the mentors, kitchens, and defining moments that shaped his career. The menu highlights include beef hearts and beets, agnolotti, tagliatelle, and more.
The beverage program complements the experience with a curated and rare selection of wines. A dedicated sommelier will be present at every service, offering thoughtful pairings to enhance each course.
The Space
Designed to feel intimate and immersive, Pasta Privato features a 30-seat dining room built around interaction, storytelling, and craft.

The space removes traditional barriers between the kitchen and the table, inviting guests into the process. Diners are guided through the origins of recipes, the history of regional pasta shapes, and the stories behind the producers who bring each dish to life.
“We wanted to create something that feels like you’ve discovered it,” says co-owner Adam Teolis. “It’s for the guest who wants to know the name of the farm and the story behind the pasta on their plate. It’s elevated and intentional, but still warm and welcoming.”
